Ingredients:
1 small round sourdough loaf or 4 rolls
2tbls butter, softened
Salt and pepper
1tsp chilli flakes
4 cloves garlic, crushed
½ tsp English mustard powder
1 brie or camembert cheese
1tbls fresh oregano leaves
Method:
- Measure the size of the bread in relation to the sixe of the cheese. Cut a circle in the top of the bread, roughly the side of the cheese. Hollow out a cavity for the cheese and scoop out the bread. Use this bread to make croutons for salads and soups.
- Spread the butter of the inside of the cavity. Season well with salt and pepper. Sprinkle in half the chilli flakes, garlic, mustard powder and oregano leaves.
- Place the cheese in the cavity and sprinkle over the rest of the chilli, garlic, mustard powder and oregano leaves.
- Wrap in foil and bake on the BBQ on a medium hot grill until the cheese is melty.
The Ish Factor: English mustard powder is a seasoning and cooking condiment made from ground mustard seeds, turmeric and flour. It has a strong, sharp taste that is pungent rather than hot. You can also buy it ready prepared as a paste in a jar. I use English mustard to flavour salad dressings, marinades, basting sauces and anytime a little oomph is required.
